1. One-Pot Pasta
Ingredients
– 200g pasta
– 1 can of diced tomatoes
– 1 onion, chopped
– 2 cloves of garlic, minced
– 1 bell pepper, chopped
– 1 zucchini, sliced
– 2 cups vegetable broth
– Olive oil
– Salt and pepper to taste
– Fresh basil for garnish
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add the chopped onion and garlic, and sauté until fragrant.
3. Add the bell pepper and zucchini, and cook for a few minutes.
4. Pour in the diced tomatoes and vegetable broth.
5. Add the pasta and bring to a boil.
6. Reduce heat and simmer until the pasta is cooked and the liquid is mostly absorbed.
7. Season with salt and pepper, and garnish with fresh basil.
2. Campfire Quesadillas
Ingredients
– 4 large tortillas
– 1 cup shredded cheese (cheddar or mozzarella)
– 1 can of black beans, drained and rinsed
– 1 bell pepper, chopped
– 1 onion, chopped
– Olive oil
– Salsa and sour cream for serving
Instructions
1. Heat a skillet over medium heat and add a bit of olive oil.
2. Place a tortilla in the skillet and sprinkle with cheese, black beans, bell pepper, and onion.
3. Top with another tortilla and cook until the bottom is golden brown.
4. Flip the quesadilla and cook until the other side is golden and the cheese is melted.
5. Cut into wedges and serve with salsa and sour cream.
3. Van life Veggie Stir-Fry
Ingredients
– 2 cups mixed vegetables (broccoli, carrots, snap peas, bell peppers)
– 1 block of tofu, cubed
– 2 cloves of garlic, minced
– 1 thumb-sized piece of ginger, grated
– 2 tbsp soy sauce
– 1 tbsp sesame oil
– Olive oil
– Cooked rice or noodles for serving
Instructions
1. Heat olive oil in a large skillet over medium-high heat.
2. Add the cubed tofu and cook until golden brown on all sides. Remove from the skillet and set aside.
3. Add more olive oil to the skillet and sauté the garlic and ginger until fragrant.
4. Add the mixed vegetables and cook until tender-crisp.
5. Return the tofu to the skillet and add the soy sauce and sesame oil.
6. Toss everything together and cook for another minute.
7. Serve over cooked rice or noodles.
